Avocado and smoked salmon toasts

A small lunch which punches above its weight in taste, nutrients and fullness-factor.
Serves: 1 • Prep: 10 mins • Easy 
  • 1 ripe avocado
  • a few chilli flakes
  • 2-3 spring onions finely chopped
  • 2 slices of smoked salmon
  • couple of small lettuce leaves
  • few thin slices of red onion
  • 1 tablespoon of full fat creme fraiche or Greek yoghurt
  • squeeze of lemon
  • sea salt and black pepper
  • slice of toasted sourdough bread (double the toast if you have burned lots of energy today!)
Mash the avocado and stir in the spring onion and a few chilli flakes.

Pile the avocado mix on top of the toast and top with the lettuce leaves and smoked salmon.

Add the creme fraiche or yoghurt.

Finish with the sliced onion, salt and pepper and a few more chilli flakes.

Finally, add a squeeze of lemon.
