Simple and punchy.
Filling and lunchy.
I’m a poet and I didn’t know it.
Serves: 1 • Prep: 10 mins • Easy
3 slices of smoked salmon – buy stuff with no additives. Wild is good if you are very rich :D but please think about the fish’s life
1 ripe avocado
¼ of a cucumber, julienned darling
handful of salad leaves or spinach
pinch of chilli flakes
1 tablespoon of olive oil
splash of white balsamic vinegar
Remove the avocado flesh from the skin. Eat what’s left in the skin, if any, with a teaspoon as there’s a lot of goodness right next to the skin.
Slice the avo into long slices.
Assemble it with the cucumber, salmon and leaves so that it looks visually awesome.
Drizzle on your olive oil and balsamic.
Scatter your salt and pepper, and the chilli flakes, from a height. Like any good TV chef.
Yes this has MASSES of 'good fats' and anti-inflammatory wonderfulness but alongside that its claim to fame is its 'fulness factor'. Avos and salmon provide a creamy sense of satisfaction to your tum and it will delight in taking its time to pass them gently'ly and silkily through your system, thus avoiding afternoon desires for doughnuts and so on.
A footnote to this is please don't believe that avocados are a superfood and think you have to blend them into everything, including doughnuts. They're very high energy and not amazingly environmentally friendly if you live in Europe. So daily consumption is not recommended.
