Caprese with fried tomatoes and bacon

Another variation on a fitnaturally client favourite. This time the tomatoes are fried and it comes with bacon. It adds a gorgeous depth of flavour.

  • 1 ball of buffalo mozzarella
  • 1 ripe medium tomato – needs to be nicely ripe rather than a supermarket bullet
  • handful of fresh basil
  • 2 rashers of streaky bacon, buy good quality bacon with no additives/added water. I used ‘Spoilt Pig’.
  • 1 tablespoon of olive oil
  • splash of white balsamic vinegar
  • sea salt and black pepper
Fry the bacon and tomato and a little olive oil – without overheating the oil.

Arrange the basil on the plate then add the fried tomato.

Roughly tear the mozzarella ball in half and add to the plate.

Finish by adding the bacon and drizzling over the oil and vinegar and adding a sprinkle of seasoning.
