Baked apricots and Greek yoghurt

Baking apricots intensifies their flavour and results in a beautiful texture that perfectly complements cool creamy Greek yoghurt.

Ingredients
  • 2 ripe apricots, halved and stoned
  • clear honey
  • 160g Greek or plain yoghurt, full fat
  • 1 dessert spoon of full fat creme fraiche
  • dessert spoon of chopped mixed nuts
Instructions
Heat the oven to 180 degrees then lay the apricots on a baking tray and roast them for 15 mins.

Mix the creme fraiche into the yoghurt and serve topped with the apricots, honey and chopped nuts.
