Beef and avocado open sandwich

Sandwiches are very nice with just one slice of bread (even if you cut it in half and make it into a trad sammo). This one combines some great protein with v nutritious accompaniments. Mainly though, it’s lush.
Serves: 1 • Prep: 5 mins • Easy 
  • 1 slice of sourdough bread (not shown in this piccie, so use your imadge there)
  • handful of dark greenery such as watercress, basil, rocket
  • sliced red onion
  • sliced ripe tomatoes (none of those supermarket bullets, leave your tommys out of the fridge)
  • half a ripe avocado, sliced
  • few slices of nicely cooked beef (grass fed if poss)
  • 2 teaspoons of mustardy/spicy chutney
  • seasoning
Just layer it all up on top of the bread, as shown in the piccie!

Beef is a good source of vitamin B12, which is key for red blood cell production (tuna, salmon and sardines are actually many times higher in B12 though!). It's also rich in vitamin B3, which helps to convert food into energy, incidentally mushrooms are also high in B3 and included in this recipe. Adding some vegetables raises the fibre and nutrient profile.
