Mega beetroot and carrot salad

When I was little I hated beetroot! Beetroot and celery were my only dislikes, now it’s just celery….. Lots of people think of beetroot as the pickled stuff in jars but the real mccoy has a far more subtle, delish, flavour.
Serves: 4 • Prep: 5 mins • Easy 
  • 3 raw beetroot, peeled and julienned/grated
  • 2 large carrots, peeled and julienned/grated
  • 4 tbsps of extra virgin olive oil
  • juice of one orange
  • squeeze of fresh lemon
  • sea salt
  • 1-2 tbsps of poppy seeds
Combine the OJ, lemon, oil, salt and poppy seeds.

Mix the carrot and beetroot so they are nicely combined. Add the dressing.

Serve with cold meat and new potatoes, or potatoes dauphinoise, and a crisp green salad.
