Berry and lemon curd yoghurt

Kinda like a pudding for brekkie, but healthier. Yoghurt helps to keep you feeling full, because of its protein. Berries add fibre, vitamins and minerals; lemon curd gives it a gorgeous edge. By the way, the lavender in the pic is just for effect!

Ingredients
  • 170g Greek yoghurt, we like Tim’s Dairy
  • handful of blueberries – if you have time you can gently heat and soften them in a shallow pan
  • 1 dessert spoon of Blueberryactive, or natural blackcurrant cordial
  • 1 teaspoon of lemon curd, we use Tiptree
  • 1 tablespoon of mild clear honey, such as acacia
Instructions
Gently fold the lemon curd, honey, blueberries and Blueberry Active/cordial into the yoghurt.

Rather than totally mix it, leave some white yoghurt showing so you get a nice sharp contrast.
