Blackberry bustle

The best things in life are free! And blackberries are one of them. So get your fingers black and have a gorgeous afternoon bustling in the late summer/early autumn hedgerows. The other, less evocative, name for this is ‘Blackberry Bustle’ is compote. The whole thing is so much lovelier knowing its ingredients are mainly foraged.
Serves: Loads! • Cook: 15 mins • Easy 
  • 250g blackberries, washed
  • 30g golden caster sugar
  • squeeze of fresh lemon
Add all the ingredients to a heavy pan and add a splash of boiling water – but keep a handful of blackberries aside.

Simmer and stir until smooth.

Feel free to sieve the final compote. Stir in the whole blackberries.

Spoon into sterilised jars and keep in the fridge once opened.

Use on Greek or natural yoghurt, porridge, or with oats and cold milk.
