  • 4 pints of double cream
  • 2 teaspoons of sea salt, can grind it down with a mortar and pestle – optional
Using a food mixer whisk the cream on medium speed until it separates into solid and liquid. This takes about 7 minutes. Add your salt for the last 30 secs.

Turn the mixture into a cold sieve and sieve it so you’re just left with the butter. You can save the buttermilk for other recipes.

With clean cold hands – or use wooden butter bats – squeeze any remaining liquid out. This is important as if you leave it in the butter will go off more quickly.

Bat or pat it into shape and cut into blocks and wrap in greaseproof paper for stotage. Can be frozen.
