Chilli crab sourdough toast

Every mouthful of this makes you say rude words, in a very very good way. OMG this is absolutely amazing as well as so good for you.

Crab contains plenty of zinc which is fab for immunity, skin health and sense of taste; copper for thyroid function, bone and tissue health and energy production; Selenium, also for thyroid function (never neglect your thyroid, it drives virtually EVERYTHING!); and vitamin B12 for cardiovascular support, DNA production, energy production and brain and nervous system health.

Ingredients
  • 2 slices of wholegrain sourdough bread, toasted and buttered
  • 100g white crabmeat. 'Seafood and eat it' is a good brand.
  • 1 tablespoon of full fat mayonnaise
  • 1 small red chilli, deseeded and finely chopped
  • half a fresh lemon
  • sea salt
  • fresh parsley to garnish
Instructions
Mix the crab with mayo, squeezed half lemon, chilli and salt. Pile it onto the toast and sprinkle the parsley over. Serve with green salad, I included fresh fennel in mine.

Umm, that's it; apart from eating it and being in raptures.

Crab and most shellfish is a great source of zinc. Apart from zinc's benefits that I talked about in the intro it has other vital functions including stabilising the structure of DNA, helping gene expression and forming cells. It's hugely important for immunity too. Zinc absorption can be inhibited by fibre so in a high fibre diet it's especially prudent to optimise intake.
