Chilli lime dressing

A good punchy dressing really transforms a salad – an undressed salad is a bit of a bore isn’t it. And, if you really need science, the oil helps with nutrient absorption. ANNYYYWAAAY, this is a good spicy, zingy dressing, especially fantastic on prawn, avocado and rocket salad.
Serves: 2-3 • Prep: 5 mins • Easy 
  • 2 tablespoons of freshly squeezed lime juice
  • 2 teaspoons of mild clear honey
  • 1 red chilli, deseeded and finely chopped
  • 3 tablespoons of extra virgin olive oil
  • pinch of sea salt
Put all the ingredients into a small bowl or a jar, and whisk to mix.
