Christmas porridge

Here’s a jolly-good seasonal variation for porridge; kinda like having a mince pie on your oats! Emma, one of our clients, said today “OMG Christmas is happening in my mouth!”

Ingredients
  • 40g oats (females), 55g oats (males)
  • 250ml-350ml whole milk,
  • approx 1 heaped dessert spoon of mixed fruit (sultanas/raisins type a thing!)
  • 2 teaspoons of flaked almonds or any chopped nuts
  • squeeze of fresh orange juice
  • zest from half an orange (optional)
  • 1 heaped teaspoon of butter
  • 1½ tablespoon of mild clear honey
  • pinch of nutmeg and cinnamon
Instructions
Make the porridge in the normal way on the hob with whole milk and 1 tablespoon of honey.

In a small pan add the fruit, nuts, zest, juice, butter and remaining honey and heat through.

To serve spoon the warm fruit mixture on to the porridge and even add a swirl of cream, sprinkle on nutmeg and cinnamon and a dessert spoon of toasted oats if you want as well!
