Warm courgette and tomato salad with mozzarella

A warm twist on caprese salad. The contrast of lightly fried courgettes and tomatoes with cold mozzarella and fresh basil is delightful on the tongue!

  • 1 ball of buffalo mozzarella, about 125g, sliced or torn
  • 10-12 halved baby plum tomatoes or cherry tomatoes, in fact any ripe tomatoes work here (I only had beef tomatoes on recipe day!)
  • couple of courgettes, cut into diagonal slices, or ribbons
  • 1 tablespoon of olive oil
  • 1 teaspoon of butter
  • a few fresh basil leaves
  • sea salt and black pepper
Heat the oil and butter in a frying pan and fry the courgettes and tomatoes til they just lose their firmness, 3-4 mins.

Serve on a shallow dish or plate topped with the mozzarella and basil and seasoned wit the salt and pepper.
