Creamy coconut and almond porridge

We feel that people can’t get enough porridge variations and we’re happy to provide them. This one is a coconutty, almondy, creamy sensation that will keep you full as a boot!
Serves: 1 • Prep: 5 mins • Cook: 5 mins • Easy 
  • 50g of porridge oats
  • 150ml organic full fat coconut milk
  • 100ml whole organic milk
  • 1 tablespoon of mild clear honey or maple syrup
  • 1 tablespoon of ground almonds
  • swirl of double cream and a few chopped brazil nuts (optional)
Add the oats, coconut milk, milk and honey or maple syrup to a heavy saucepan.

Heat and stir until the porridge is nice and creamy. Takes just a few minutes.

Serve topped with a swirl of cream and maple syrup and a few chopped nuts.

You can add a couple of drops of vanilla extract too if the mood takes you!
