Creamy korma chicken

Loved by many this super-fast meal is gorgeously creamy, succulent and spicy. Perfect with green salad or steamed vegetables. Always buy high welfare chicken and treat it as an occasional luxury, the chicken industry is one of the worst for animal cruelty. I used free range organic fillets here and eat chicken no more than once a month, if that. But when I do eat it I make it good!

  • 2 free range organic chicken breasts. I used mini fillets
  • 90g full fat cream cheese
  • 2 tbsp korma paste
  • 1 tbsp chopped coriander plus extra to serve – optional
  • juice of half a lemon
  • 1 red chilli (seeds removed and thinly sliced)
  • 12 cherry tomatoes
  • olive oil
Heat oven to 200C/180C fan/gas 6 and place the chicken in an ovenproof dish.

Mix the cream cheese, korma paste and 1 tbsp coriander, if using, with a squeeze of lemon.

Squeeze the remaining lemon over the chicken and spread the curry mix on top. Sprinkle with the chilli, drizzle with olive oil and bake for 15 mins.

Remove the chicken from the oven, add the tomatoes then cook for another 10 mins. Check the chicken is cooked through before eating.

Sprinkle with more coriander to serve, if you like it (are you guessing yet that I don’t? :-))

Note: Treat chicken as a luxury rather than a staple. Always buy high welfare chicken, free-range, organic.
