Creamy pesto chicken with savoury bomba rice

A really quick and delicious weeknight dinner using pre-cooked chicken and beautifully creamy bomba rice.
Serves: 4 • Prep time: 10 mins • Cook time: 20 mins • Easy
Ingredients
  • 4 pre-cooked chicken breasts, sliced
  • 4 tablespoons of mayonnaise
  • 2 tablespoons of green pesto
  • 350g of bomba rice
  • Splash of white wine
  • mugful of frozen chopped onion
  • mugful of frozen peas
  • any fresh green herbs
  • sea salt
  • olive oil
Instructions
Add a couple of glugs of olive oil to a large heavy frying pan and when it's heated ad the rice and stir. Cook for a minute before adding the wine and cooking off, then add boiling water to cover the rice, and a generous sprinkle of sea salt. Continue to simmer, stirring a couple of times until the rice is cooked. Five minutes before you think i'll be done (About 15 mins after starting, usually) add the frozen onion and peas and give it a stir.

Meanwhile, mix the mayo with the pesto and combine it with the chicken in a bowl, until the chicken is thoroughly coated.

When the rice is done pile it into a serving dish, arrange the pesto chicken on top and sprinkle with fresh herbs.

Serbe with a big colourful salad that definitely has tomatoes in it!
