Goat’s cheese, spinach and onion stuffed peppers

A really simple and tasty veggie recipe. The combination of spinach, caramelised red onion and goat's cheese is divine. Serve with a crisp green salad.
Serves: 1 • Prep: 5 mins • Cook: 15 mins • Easy 
  • 100g of goat’s cheese
  • handful of finely chopped fresh herbs of choice
  • 1 small/medium red pepper, halved and deseeded
  • ½ red onion, finely chopped
  • 4 large handfuls of fresh spinach
  • 1 small clove of garlic, crushed
  • sea salt
  • black pepper
  • tablespoon of olive oil
  • a few toasted pine nuts – optional
Heat the oven to 180 degrees.

Microwave the peppers for 2-3 mins on full, to soften slightly.

Combine the herbs and goat’s cheese.

Gently fry the onion and garlic, with salt and pepper, in the olive oil then add the spinach and wilt it.

Fill each pepper half with the spinach and onion mix and top with the herby goat’s cheese.

Bake for 10-15 mins on a roasting tray.

Sprinkle with a few toasted pine nuts, and serve with green salad.
