Creamy gorgonzola with sharp but sweet apple (or use pear if you have pears, I didn't) and crunchy walnuts. I squeezed fresh orange over it with lifted the flavours beautifully.
Gorgonzola, apple and walnut salad
Serves: 1 • Prep time: 10 mins • Easy
- handful of chopped lettuce
- a few fresh basil leaves
- 80g of Gorgonzola cheese
- 1 crispy apple, thinly sliced (or pear)
- handful of walnut halves
- 2 tablespoons of extra virgin olive oil
- splash of white balsamic vinegar
- squeeze of fresh orange
- sea salt
Combine the ingredients on a plate or in a shallow dish, drizzle the olive oil and balsamic over, give it a good squeeze of orange juice and sprinkle on some sea salt.
Walnuts are a good source of Omega 3 fatty acids to help address the common imbalance of Omegas 3 and 6 and support good cardiovascular health and brain function.
