Greek pizza

These mini pizzas punch above their size in flavour. They’re a taste sensation of hummus, red onion, creamy feta, tomatoes and spinach. No point getting a frozen pizza when these are even quicker to make.
Serves: 1 • Prep: 5 mins • Cook: 10 mins • Easy 
  • 2 mini naan breads or 1 wholemeal pitta
  • 3-4 dessert spoons of hummus
  • 100g feta cheese
  • 2 large handfuls of fresh spinach
  • sliced red onion
  • few sundried tomatoes or sunblush tomatoes
  • olive oil
  • black pepper
Spread the hummus over the base/s. Add the spinach. Top with sliced onion, crumbled feta and the tomatoes (can use fresh toms).

Drizzle with a little olive oil and add a good grinding of black pepper.

Bake in hottest oven for about ten mins.

Serve with a lush and verdant salad with a nice zingy dressing. Perfect for Friday nights.
