Greek salad

If you’ve ever been to Greece and sat at a beachside bar having a simple, proper, Greek salad (with a cold Amstel) you’ll probably already be in love with this dish. If you haven’t, it’s worth a trip to Kefalonia just for lunch!

  • 100g of proper feta cheese. Not that fake stuff. White, crumbly and salty!
  • 2 large ripe tomatoes, cut into big rough chunks. No neat slices please.
  • cucumber chunks
  • sliced red onion
  • romaine lettuce (optional and not actually what you would get in Kefalonia!)
  • a few black olives (optional)
  • 2 tbsps of good peppery extra virgin olive oil
  • white balsamic or red wine vinegar
  • mixed dried herbs
Ummm. Put it all in a bowl!

Herbs are sprinkled from a height, with gusto. Oil is poured on Jamie-Oliver style.

If you’re not on a fitnaturally plan, and it’s a hot hot day, have it with a hunk of good bread and a cold beer.
