Herby sautéed greens

Whenever I cook these they never actually make it to people's plates because I eat them all before they get there!

If you think greens are boring you need these in your life. Cooked in butter, with herbs and seasoning, maybe some garlic.

Serves: 4 • Prep: 5 mins • Cook: 10 mins • Easy 
  • 1 savoy cabbage sliced into strips
  • 2 leeks, finely sliced
  • large handful of green beans or sliced runner beans
  • 1 fat clove of garlic, crushed – optional
  • 2 tablespoons of butter
  • 1 tablespoon of italian seasoning, or add fresh herbs of choice, the italian seasoning works really well though
  • sea salt and black pepper to taste
  • TIP: Use green veg you like! Could be chard, kale, soya beans, broad beans, pak choi, even lettuce is gorgeous – any green veg including something leafy. The pic shows added mushrooms, which is also nice.
Melt the butter in a large shallow pan and add the leeks, and garlic if using. Gently cook until slightly soft.

Add the rest of the vegetables, turn the heat up high and stir fry with a large splash of boiling water (about a teacupful).

Add the herbs and seasoning.

Serve with a squeeze of fresh lemon.

Serving suggestion
These can be a meal in themselves by adding a fried or poached egg and some parmesan shavings.
