How to make sweet chilli sauce

Sweet chilli sauce can really liven up a stir fry, and is nice for dipping stuff like rice paper wraps filled with vegetables, chicken, prawns etc. Everyone should know how to make sweet chilli sauce cos shop-bought versions have added nasties such as high fructose corn syrup (not good if you value yr liver) and modified starch, plus other unmentionable non-foods. This one takes MINUTES, is delicious, and is pretty HOT! You don’t need much. This recipe makes about half a teacupful, double it if you want to make a bigger batch. Just store it in a jam jar in the fridge, and use about a teaspoonful at a time.
Makes: 150ml-ish • Prep: 5 mins • Cook: 10 mins • Easy 
  • 5 red chillies, chopped very finely, keeping the seeds in
  • 6 tbsp caster sugar
  • 6 tbsp water
  • 1 fat clove of garlic, crushed
  • good splash of rice wine or white wine vinegar
  • good pinch of sea salt
Boil the sugar and water in a heavy pan, til bubbling.

Add the rest of the ingredients, stir and leave to simmer til the sauce coats the back of a spoon.

Can stir it every minute or so.
