Nazia's spicy omelette

Spicy omelette with peppers, gorgeous with green salad. This recipe was given to us by Nazia who is one of our clients and who cooks like a dream!
Serves: 1 • Prep time: 5 mins • Cook time: 5-10 mins • Easy 
  • 3 eggs
  • ½ tsp chilli powder
  • ½ tsp turmeric
  • ½ tsp garam masala
  • sprinkle coarse black pepper
  • salt to taste
  • handful chopped coriander
  • handful grated cheddar
  • 8 cherry tomatoes quarters
  • ½ a pepper, chopped
  • bunch of spring onions, chopped
Mix all the ingredients together in a large bowl.

Melt some butter in a non stick pan and pour in the mixture.

Cool base on low heat and grill the top until solid like a frittata.

Eggs are mighty powerful but small packages of nutrition. They provide vitamin A, vitamin D, all the B vitamins, folic acid, and are a rich source of selenium (for thyroid function) and iodine, as well as many other minerals. They are an excellent source of choline which helps our cells and nerves to signal, as well as with healthy construction of the cell walls. If they marketed these in health food shops they'd go for £40 a dozen!
