One pan creamy chicken

A favourite fitnaturally recipe – creamy and comforting, yet surprisingly light. A wonderful nutritious mix of lovely foods and very pretty whatever time of year it is.
Serves: 2 • Prep: 10 mins • Cook: 20 mins • Easy 
  • 2 high welfare chicken breasts, boneless and skinless
  • ½ tbsp olive oil
  • teacup of cherry tomatoes, halved
  • handful of fresh spinach leaves
  • 2 tbsp green pesto, try making your own or buy fresh
  • 2 tablespoons of double cream or full fat crème fraîche
  • fresh basil
  • fresh grated parmesan, optional
Gently fry the chicken breasts in the oil for about 15 mins or until cooked through, letting them colour nicely on both sides.

Season with salt and pepper. Add the tomatoes, stir and let them soften, it only takes a few mins.

Lower the heat, add the pesto, crème fraîche and spinach leaves, giving it a good stir until it turns all saucy!

Serve by finishing with basil and the Parmesan if using, along with a colourful salad or mixed green veggies.
