Overnight oats with blueberries, pumpkin seeds and pistachios

This breakfast will set you up for several hours with its slow release oats, nuts and seeds. It’s as refreshing as yoghurt but as comforting as porridge, way better than a bowl of Cheerios (Cheerio being the operative part of their name….) Adults and children will all love a bowl of overnight oats with blueberries, pumpkin seeds and cashews – may not be easy to say but you won’t be talking, you’ll be eating it!

  • 100g oats
  • 150g full-fat Greek yoghurt
  • 100ml whole unhomogenised organic milk
  • 1-2 tbsp pistachio nuts
  • 1 tbsp pumpkin seeds
  • 2 dessert spoons of blueberries, you can use frozen, they’ll melt really fast
  • a squeeze of Greek honey
Mix the oats, milk and yoghurt in a glass bowl, add a touch of honey and leave covered overnight in the fridge, or you can make this 15-30 mins before eating it, it’s still gorgeous.

To serve, top the oats with the nuts, seeds, fruit and an extra good squeeze of honey.
