Grilled papaya with lime

The simplest of puddings but creates masses of Mmmms.

Packs loads of goodness in the form of vitamins A and C as well as folate and potassium. Its fragrant mildly sweet taste goes perfectly with lime, finished off with some creamy greek yoghurt.
Serves: 2 • Prep: 5 mins • Cook: 5 mins • Easy 
  • 1 large papaya
  • 2 limes
  • 2 teaspoons of vanilla sugar
  • 2 dessert spoons of full fat Greek yoghurt
Heat the grill to its highest setting.

Halve the papaya and scoop out the seeds.

Squeeze half a lime over each half and sprinkle a teaspoon of vanilla sugar over each.

Grill until bubbling.

Serve with a heaped dessertspoon of greek yoghurt or some double cream, and half a lime for squeezing.
