Peanut butter and basil salad sandwich

When I was little we used to have big sandwiches that my mum called ‘Dagwood Bumsteads’. They contained peanut butter, salad and salad cream and were stacked high.

Our fitnat version has basil and mayo and is mega! The pic’d sarnie is by our Thomas, or ‘Thomarto’ as he’s known in the trade.
Serves: 1 • Prep: 5 mins • Easy 
  • 2 slices of sourdough or proper bread*, buttered with proper butter crunchy peanut butter – about a dessert spoon. That's PB just made with peanuts, no horrid palm oil.
  • romaine lettuce – 1 or 2 leaves
  • handful of fresh basil
  • 1 large ripe tomato
  • few slices of cucumber
  • 1 tbsp full fat mayo
  • sea salt and black pepper
* no more than flour, water, yeast and salt
Make the sandwich.

Eat it.

Say “Well I really didn’t think that was going to be so DELICIOUS!”

By the way, Thomas made the bread in that piccie too!
