Pesto cheese and tomato toasts

A perfect, easy, taste-packed post exercise lunch, try to time your exercise to end at a mealtime, so you can refuel with the meal, rather than having to eat extra.

This combines hot toast made from good bread (flour, water, yeast and salt only) with creamy pesto-y cheese and juicy ripe tomatoes. Tomatoes always need good seasoning, so don’t be afraid of that.

Buy cream cheese that is not *that* popular brand, because that brand contains additives! Supermarket own, in this case Waitrose, is usually additive-free.

Ingredients
  • 1 slice of sourdough toast or ‘good bread’ toast, seeded artsian shown in piccie – 2 slices if you’ve done a hard workout
  • 1½ dessert spoons of cream cheese
  • 1 teaspoon of green pesto
  • 2 ripe tomatoes from the garden or bought on-the-vine
  • sea salt
  • black pepper
Instructions
Toast the bread until golden.

Mix the pesto with the cream cheese, don’t go too mad, it looks nice kinda swirled in.

Spread the cheese and pesto on teh toast and add the sliced tomato.

Season generously with the sea salt and black pepper.
