Lunchtime pesto pasta

Here at fitnaturally we don’t demonise pasta and carbs, we just prescribe ’em in moderation. A little bit of pasta ain’t gon kill ya! So, this is a little bit of pasta, with a whole load of tasty stuff. Just don’t tell the nouveau cave people :D
Serves: 1 • Prep: 5 mins • Cook: 10 mins • Easy 
  • 60g of penne or farfalle pasta (obvs the shape is CRITICAL here)
  • 1 dessert spoon of pesto – make your own if poss, it’s dead easy
  • handful of baby plum tomatoes, halved
  • handful of spinach leaves
  • 1 dessert spoon of pine nuts
  • squeeze of fresh lemon
  • seasoning
  • a few parmesan shavings
Cook the pasta in boiling water until al dente, which means basically so it still has some bite.

Stir in the other ingredients apart from the parmesan.

Well that was easy…

Feel free to add mozzarella or chicken. One ball of mozz or a torn chicken breast.
