Power packed salad

No salads are not boring :-p

This one packs a mouthful of lively flavour in each bite. It has all the colours, all the tastes and ALL the nutrition. Throw it together, pack a separate dressing, make all your lunch companions green with envy. Ha!

Ingredients
  • large handful of finely shredded spring greens or Cos lettuce
  • small handful of large basil, shredded
  • small handful of watercress, chopped
  • 8 baby plum tomatoes, halved
  • 2 dessert spoons of chopped red onion
  • 6cm of cucumber finely chopped (the size of salad chop affects the taste, I promise!)
  • 40g of quality strong Cheddar, I used Snowdonia Cheddar, roughly broken or cut into bitesize pieces
  • 2 free range organic hard boiled egg, quartered lengthways
  • 6 chopped cashew nuts
  • sprinkle of red chilli flakes
  • optional: 2-3 slices of quality salami
  • French dressing
Instructions
Arrange everything in an airtight container, pack the dressing in a separate small pot and add when lunchtime comes.

If eating at home just make and add it all there and then!

This has all the beautiful nutrients from salad stuff that you can read about on our other recipes. I'm going to focus on eggs and cheese here. Eggs are little packages of fantastic nutrition, just make sure they came from happy hens.

Eggs are a brilliant source of protein but they also deliver lots of choline. Choline helps in DNA construction (pretty fundamental!) as well as brain and nerve messaging and liver detox. It does this via a process called methylation - Google it! Choline also helps to form the membrane of cells, with its soapy structure it allows the cell to be permeable.

Amongst eggs' loooong list of nutrients is vitamin B12 (in fact eggs have ALL the B vits) B12 plays a role in DNA production and nervous system health as well as in the production of red blood cells. It also provides iron for good oxygen transport.

Cheese then. In these days of dairy-hysteria cheese can be overlooked but that's a huge shame. Well-made cheese, properly and artisanally produced cheese rather than mass produced 'soap' will give your gut a much wider range of happy, healthy bacteria and that will help make yoru whole system loads happier, including your brain. Cheese also delivers loads of calcium.

If you use strong cheddar you can use a bit less as the flavour is punchier.
