Quick baked potatoes

Want to know how to make quick baked potatoes and still have the lovely crispy golden skins? Well you’ve come to the right place, cos at fitnaturally we LOVE jacket potatoes. That doesn’t mean eat great big jackets every night but when you do eat them eat em good and proper, with real butter and sea salt. Even better, scoop the flesh out and eat it, then add some grated strong cheddar to the empty skin and squeeze it together to make a gorgeous crunchy, buttery, cheesy, salty ‘wrap’. This would be my choice of food if I was stranded on a desert Island, or just home alone for the day, to be fair…

  • 2 (floury variety) potatoes, washed and dried and pricked with a fork. About 400g for men and 300g for women.
  • butter, melted, enough to roll the potatoes in
  • sea salt
Microwave the potatoes on full power for about 12-14 minutes, turn them over half way through. Meantime heat the grill on high.

Remove the potatoes from the microwave and roll them liberally in butter, then sprinkle them with a little sea salt.

Grill them for a few minutes, turning them over half way through.

Serve with more butter and the filling of your choice. Maybe try our chilli chorizo beans and some lovely colourful crunchy salad.

Potatoes are wrongly slated by nutrition fashionistas. They have plenty going for them, as well as being incredibly delicious!

Their biggest claim to fame is their vitamin B6, which is used throughout the body for cell formation, and that's a pretty big task. B6 is also a key player in nerve and brain function, as well as gene expression. Spuds are also pretty rich in vitamin C, which isn't only good for immunity but plays a strong part in forming and maintaining healthy connective tissue and skin.

Quick baked potatoes (or even slow baked potatoes) are also high in fibre, which is fantastic news for your gut and gives it a good old work out. Guts need exercise too!
