Roasted cauliflower

Whether you’re trying to lose weight healthily or just follow a really nutritious diet, vegetables should be the main event on your lunch and dinner plates. Lots of people shun cauliflower because they’re used to over-boiled mushy stuff they used to have at their nan’s house. The mush not only tastes yukky (sorry nannas) but boiling cauli in water means its nutrients are reduced hugely. The way to cook delicious nutritious cauliflower is to roast, steam or stir-fry it. This recipe shows you exactly how to roast cauliflower for maximum pleasure! My good mate Helen gave me this recipe – thanks oh lovely one x

Ingredients
  • 1 organic cauliflower broken into florets
  • extra virgin olive oil
  • 1½ teaspoons of ground turmeric
  • sea salt
Instructions
Spread the florets on a baking tray lined with greaseproof paper.

Sprinkle over the turmeric and salt and drizzle over the olive oil. Give the tray a good shake so the cauliflower is coated.

Roast at 200 degrees for 15 – 20 mins until slightly crispy.

To add even more deliciousness sauté some chopped onion and flaked almonds, and wilt some spinach into it, then gently combine with the roasted cauli.

Lots of people think that because cauliflower is white it must be less nutritious than its cousin, broccoli, or than other green veg or the coloured versions of cauli. Not so. It's just as fantastic as all of them. It's rated as excellent for its vitamin C, vitamin K, vitamin B6 and folate.
