Spicy chicken and avocado wraps

A small wrap with a big punch. Creamy avocado sits with fried chicken and spicy flavours. If you’re going to eat a bit less get as much goodness and flavour into it as you possibly can!
Serves: 2 • Prep: 5-10 mins • Cook: 10 mins • Easy 
Ingredients
  • 1 free range chicken breast, thinly sliced
  • good squeeze of lime juice
  • ½ teaspoon of chilli powder
  • 1 garlic clove, chopped
  • 2 teaspoons of olive oil
  • 2 wholegrain wraps or a wholegrain pitta
  • 1 avocado, halved and stoned
  • 1 roasted red pepper from a jar, sliced
  • 1 ripe tomato, sliced
  • 1 tablespoon of mayo or Greek yoghurt
  • handful of rocket or watercress
  • a few sprigs of basil, chopped
Instructions
Mix the chicken with the lime juice, chilli powder and garlic.

Heat the oil in and fry the chicken for a couple of mins. Meanwhile, warm the wrap or pitta following the pack instructions.

Mash the avocado and spread over the wrap or inside the pitta.

Add the peppers to the pan to warm them through then pile onto the wrap/pitta with the chicken and tomato, and sprinkle over the basil and rocket or watercress.

Add the mayo or Greek yoghurt, roll (if using a wrap), cut in half to serve.
