Spicy green eggs recipe

Next-level fried eggs with mildly spiced spinach and a touch of creamy yoghurt.
Serves: 1 • Prep time: 5 minutes • Cook time: 15 minutes • Easy
Ingredients
  • Olive oil for frying  
  • quarter of an onion, or one leek leek, finely sliced
  • 1/4 tsp coriander seeds
  • 1/4 tsp fennel seeds
  • pinch of chilli flakes, plus extra to serve
  • 2 large handfuls of fresh spinach
  • 2 organic free range eggs
  • 1 tbsp of Greek yogurt
  • squeeze of lemon
Instructions
Heat the oil gently in a large frying pan. Add the onions or leeks and a pinch of salt, then cook until softened and translucent. Add the coriander and fennel seeds and the chilli flakes. Once the seeds begin to crackle, add the spinach and turn down the heat.

Stir everything together until the spinach has wilted slightly but is still nice and green, then push it to one side of the pan. Pour a little more oil into the pan, then crack in the eggs and fry until cooked to your liking.

To serve, stir the yogurt through the spinach mix and season, plate it up with the fried eggs and squeeze over a little lemon juice. Season with black pepper and chilli flakes to serve.
