Supercharged egg, ham and avocado salad

This makes a fab and invigorating lunch, keeping your blood sugar levels from rocketing and making you feel full all afternoon. Lots of flavour and jam-packed with health-giving goodness.

Peel your avocados carefully, leaving the dark green layer on the outside, as that is where nutrients are highly concentrated. If superfoods were real, avos would be one of them! All natural food is super – variety is key.
Serves: 1 • Prep: 10 mins • Easy 
Ingredients
  • large handful of mixed leaves, try watercress, spinach and rocket
  • 6 halved baby plum tomatoes
  • 2 slices of quality ham
  • 1-2 hard boiled free range organic eggs
  • 6 black olives
  • few chunks of cucumber
  • few thin slices of red onion
  • 1 ripe hass avocado
  • 2-3 tablespoons of any natural dressing – French dressing works well
  • 2 new potatoes, chopped into chunks – optional
Instructions
Combine the leaves, tomatoes, cucumber, onion, egg, ham and olives then add the dressing as you’re ready to serve.

If you’re taking this as a packed lunch then carry the dressing separately in a small pot.
