The best sandwich

Now then, you don’t get many of these to the pound. The best sandwich ever for people who’ve been very physical that day, like running for a long time, extreme gardening, swimming the length of the Thames and so on.. Also good if you’re doing brunch and dinner, i.e. a two-meal day, this’ll set you up late morning til dinner time (the next day prob:D). I ate this monster after I ran for an hour and three quarters late morning after no breakfast. Worth it.

Ingredients
  • 2 slices of buttered real bread – that’s no more than flour, water, yeast and salt, I used homemade sourdough.
  • 1 free range organic egg, fried
  • finely chopped spinach and lettuce
  • 2-3 rashers of streaky high welfare bacon (optional)
  • a few slices of a good extra mature cheddar
  • optional – thinly sliced red onion, ketchup, mayo
Instructions
Place the filling ingredients between the slices of bread to make The Best Sandwich!

Eggs are powerful but small packages of nutrition. They provide vitamin A, vitamin D, all the B vitamins, folic acid, and are a rich source of selenium (for thyroid function) and iodine, as well as many other minerals. They are an excellent source of choline which helps our cells and nerves to signal, as well as with healthy construction of the cell walls.

Bacon provides iron. I'm not gonna big-up bacon here but it's alright sometimes :-)

Cheese is not only gorgeous to eat but provides some important nutrients including phosphorus, calcium and vitamin B12. Phosphorus forms part of every one of our cells, so is pretty important! It's actually abundant in a varied diet so you don't have to OD on cheese - sorry :) Calcium is not only good for teeth and bones but helps to balance the PH of the blood as well as assisting with nerve signals and muscle function. B12 performs a lot of functions but its main claim to fame is red blood cell production.

Lettuce and spinach are good sources of vitamin K for blood clotting and bone health, and vitamin A for good vision, immunity and reducing inflammation.

Sourdough bread will make your gut happier by giving it lots of lovely probiotics.
