Tomato, lentil and lime soup

Warm, comforting tomato soup with and zingy kick.

You can easily adapt this recipe with your 'kick' of choice.
Serves: 2 • Prep: 10 mins • Cook: 10 mins • Easy 
  • 1 onion, chopped
  • 1 large carrot, grated or chopped
  • a pinch chilli flakes (optional)
  • cumin seeds
  • 3 tbsp Puy or red lentils
  • 1 x 400g tin chopped tomatoes
  • 300ml veg stock
  • 1 lime, juiced and zested
  • olive oil
Soften the onion and carrot in olive oil.

Add the chilli flakes and cumin for a minute then add the lentils, tomato and veg stock.

Simmer for about 15 minutes then whizz it with a stick blender – go as smooth or a rustic as you like!

Stir in the lime juice and zest and serve.

Mega with a chunk of fresh or toasted sourdough.
