Tomato mozzarella toasts

Classic lunch. Nice sourdough toast with buffalo mozzarellla and sweet juicy baby tomatoes.
Serves: 1 • Prep: 5 mins • Cook: 5 mins • Easy 
  • 1 slice of sourdough toast
  • teacup of baby plum tomatoes, halved
  • 125g of buffalo mozzarella
  • olive oil
  • fresh basil salad to serve
Lightly fry the tomatoes in olive oil with salt and black pepper.

Place the tomatoes on the toast and add the ball of mozarella.

Finish with basil leaves and a drizzle of olive all and some black pepper. Alternatively spread the toast with green pesto.

And that’s all there is to it!
