Tomatoes on toast

Hot, very buttery toast sits under juicy tomatoes seasoned with basil salt and plenty of black pepper.

This meal is bursting with flavour, not to mention its B vitamins, Vit C, Vit E, Vit A and awesome antioxidant power. It's also dead easy!

Ingredients
  • good chunky bread, either sourdough or any real bread (no more than flour, water, yeast, salt)
  • real butter
  • tinned tomatoes
  • basil
  • salt (Barts spices) or use some smoked sea salt
  • black pepper
Instructions
Heat the tomatoes in a saucepan or microwave (microwave 90 secs).

Toast the bread. Spread lots of lovely butter on the toast.

Drain the juice from the tomatoes and chop or leave whole.

Place the tomatoes on the toast.

Season with salt and plenty of black pepper.

Could add chilli flakes if you’re that sort!

Serve with a glass of full fat milk or follow with some greek yoghurt for protein.
