Warm Greek salad

If you get a bit fed up with cold salads (although there are many delicious combos) then throw this warm salad together in less than ten minutes. The saltiness of the feta and olives offsets the sweet sharp tomatoes and the courgettes are a lovely alternative to the usual cucumber. Feel free to add some red onion, thinly sliced, raw or cooked.
Serves: 1 • Prep: 5 mins • Cook: 5-10 mins • Easy 
  • 1-2 courgettes, quartered lengthways and chopped into small chunks
  • handful of baby plum tomatoes
  • half a red pepper, chopped
  • 40g of feta cheese
  • 2 tablespoons of olive oil
  • 4-5 pitted black olives (optional)
  • sea salt
  • splash of red wine vinegar
Heat the oil and fry the courgettes, tomatoes and pepper with a pinch of sea salt until softened but retaining some ‘bite’. Takes 3-4 mins.

Transfer into a serving dish and crumble the feta over, then scatter the olives (not to the wind, but over the salad…)

Delicately splash on the red wine vinegar. I can’t think of a more enticing way to say that.
