Yoghurt berry lollies

I'm writing this recipe on a hot July evening with the windows wide open letting in the stillness of the summer night. It's so very hot at the moment that eating feels like hard work, so I thought "What better than freezing one's breakfast, wot wot!" So these yoghurt berry granola lollies came to pass. I hope you like them – a lolly for brek, who knew!

P.S. Also good after hot hard exercise!

  • 600ml of Greek yoghurt
  • 150ml double cream (optional)
  • 40ml mild clear honey such as acacia
  • 4 heaped dessert spoons of any berries – can be frozen
  • 4 dessert spoons of granola – optional
  • You will need four ice lolly moulds.
Mix the cream (if using) and honey into the yoghurt then stir in the berries so they’re evenly distributed. If you want a more marbled effect heat the berries so the juices run – this works well with blackcurrants.

Pour the mixture into four lolly moulds (or more moulds if you have leftover mixture), then add a thin layer of granola to the top of each one.

Freeze them in such a way that that all the yoghurt doesn’t fall out into the freezer!
